This book forms part of a series that has been designed to provide a study aid for students undertaking red meat inspection and other courses where knowledge of bovine meat inspection is required such as those for Environmental Health Officers, veterinary degree students, official veterinarians and anatomical pathology residents. It is hoped that it may also provide information in a 'user friendly' format for abattoir owners and producers as to the nature of rejections recorded by inspectors.
This second edition has been augmented by more photographs and the addition of less common conditions and parasites that may be encountered in post mortem inspection.
Wherever possible, photographs illustrating anatomical features and conditions have been included, the later generally depicting severe examples of conditions. This is a conscious decision, arrived at by the author, after giving numerous lectures on meat inspection where he learnt that no two people would describe something the same way.
Ideal for students undertaking examinations in these areas and on red meat inspection. It is also a valuable reference for qualified official veterinary surgeons and meat inspectors within an abattoir.

Andy Grist is the teaching fellow in veterinary public health at the University of Bristol Vet School at Langford. He worked for the UK Government's Meat Hygiene Service for 10 years as a meat hygiene inspector in red meat, white meat and wild game abattoirs and was awarded the 2006 MHS Merit Trophy for services to meat inspection.
At Langford he lectures on meat animal pathology, welfare at slaughter and parasitology to veterinary undergraduates, environmental health students and post graduates undertaking the official veterinarian course.
Including 2nd editions, he has authored six books on meat inspection that have been very well received. He has also been awarded the Students’ Award for Outstanding Teaching (2018) and was voted “best in Bristol’ in 2016.
