These are the Proceedings for the 5th Worldwide Distilled Spirits Conference. Such challenges, and their solutions are comprehensively discussed within this book, the contents of which originate from the Worldwide Distilled Spirits Conference held in Glasgow in the autumn of 2014. This event, organised by the Institute of Brewing & Distilling, Scottish Section, hosted over 400 international delegates, all attending to discuss and debate the evolving concerns facing the modern distilling industry and the technical solutions that can address them. This book is the fifth in the series of proceedings from the Worldwide Distilled Spirits Conferences and contains over 90 individual chapters covering 8 different subject areas: distilling industry resources, yeast and fermentation, distillation, maturation, flavour, energy and environmental, consumer, perception and analytical techniques. The first four books in the series were Tradition & Innovation (2004), Production, Technology and Innovation (2008), New Horizons: Energy, Environmental and Enlightenment (2010) and Science and Sustainability (2012)
